Smoky Pumpkin Soup

     

     Looking for a great soup on a cold night? Try out this easy, fast, delicious, spicy soup!! You won't be disappointed!! 

 6 slices bacon, cooked and crumbled, reserve drippings                            

6 c. pumpkin, peeled and chopped                                                            

4 T. butter

6 c. beef broth

1/2 c. Marsala wine or beef broth

1 t. dried thyme

                                                                           
   salt and pepper to taste

Topping: Pumpkin Seeds

                                                                                                             

     Saute the pumpkin in the reserved bacon drippings and butter for about 15 minutes, stir occasionally. Add the broth. Reduce the heat and cover, let simmer until the pumpkin is tender. This takes about 30 minutes. Remove from heat, add wine or the broth, thyme, salt and pepper. Puree in batches until smooth. Pour into pot and add bacon. Simmer for about 10 minutes, then top with pumpkin seeds. Makes about 6 servings.

     Looking for something spooky and fun to do this Halloween Season?! Go to Boo at the Columbus Zoo! This is fun for the whole family of all ages.

     Boo at the Zoo runs October 18-20 and October 25-27. 

  Fridays 5:00pm- 9:00pm

    Saturdays 10:00am- 9:00pm

   Sundays   10:00am- 8:00pm

     Boo at the zoo is included with your zoo admission or zoo membership. Boo at the zoo activities start at 5:00pm on the listed dates above. Have a spooky time!!! :)

Quick Treat to Cool You Down!

     Wondering what to do with ripe bananas? Cut up your ripe bananas, put them in a freezer bag and freeze them for at least 2 hours. When you are ready for your snack put the bananas in a bowl, top with cool whip or your favorite ice cream and then for the final touch put chocolate chips or
