Smoky Pumpkin Soup
Looking for a great soup on a cold night? Try out this easy, fast, delicious, spicy soup!! You won't be disappointed!!
6 slices bacon, cooked and crumbled, reserve drippings
6 c. pumpkin, peeled and chopped
4 T. butter
6 c. beef broth
1/2 c. Marsala wine or beef broth
salt and pepper to taste
Topping: Pumpkin Seeds
Saute the pumpkin in the reserved bacon drippings and butter for about 15 minutes, stir occasionally. Add the broth. Reduce the heat and cover, let simmer until the pumpkin is tender. This takes about 30 minutes. Remove from heat, add wine or the broth, thyme, salt and pepper. Puree in batches until smooth. Pour into pot and add bacon. Simmer for about 10 minutes, then top with pumpkin seeds. Makes about 6 servings.
